Pork roast is made from deboned pig which is then seasoned internally with salt, pepper, garlic and aromatic herbs. It is left to marinade for at least a day and is then cooked on a wood fire for several hours, depending on the size of the pig and the cooking progress is checked every now and then. It can be eaten in slices as a main course or even eaten between meals in a sandwich. The most flavoursome parts are the fatty and lean parts which should be accompanied with the sauces.
