Coppa di Testa is one of the most delicious cooked sausages that is made with pork. It is produced using the head, the remaining bones after the butchering and the rind. All of this is put into a cauldron and cooked for around 5 hours. Once the cooking is complete, the meat is removed from the head and the bones and seasoned with salt, pepper, almonds, pistachio nuts and natural aromas. The mixture is then stuffed into synthetic material casings before being pressed and cooled in a special cold store. This particular sausage must be eaten soon after preparation (at most, within a couple of weeks) since it is only a type of cooked meat without any conservatives other than the salt originally added to the mix.
