Cotechino is a sausage produced during the winter period. Served with lentils, this is a perfect example of a traditionally festive specialty at Christmas. It is made using lean pork, lard, rind, spices, natural aromas and with or without the addition of pistachio nuts. Once mixed, everything is stuffed into pig intestine casings. Having pre-cooked the rind allows a faster cooking time (about 20 minutes in boiling water).
